Beijing Snack – Glutinous Rice Cake Ingredients

Ingredients: Glutinous rice, flour, preserved fruits (apple preserve, pear preserve, raisins), cooked sesame, sweet osmanthus sugar, rose petals, cooked peanuts.


Preparation: Take appropriate amounts of the above ingredients as needed.


2. Steam the glutinous rice in a pot until cooked (first steam for 40 minutes, add a small amount of boiling water and stir, then steam for another 20 minutes, totaling one hour). Also steam the flour for one hour until cooked. (This step was forgotten to be photographed.) While steaming the rice, prepare the filling: dice the preserved fruits into small cubes roughly the size of raisins, remove the stems and cores from the roses, keep only the petals, and chop the peanuts finely.



3. After steaming, the flour may have some lumps; use a rolling pin to crush it into a powder.



4. Mix the diced preserved fruits, raisins, chopped peanuts, toasted sesame seeds, and sweet osmanthus sugar together evenly.



5. Stir until well combined.



6. Sprinkle some cooked flour onto the work surface, place the steamed glutinous rice on it, knead a few times, roll into a long strip, and cut into pieces slightly larger than a ping-pong ball.



7. Press each piece into a bowl shape with your hand, place the filling inside, gradually pinch it closed, dust with some cooked flour, and gently roll it into a round shape.



8. Arrange on a plate and serve.
